Ingredients

  • 2 delicata squash
  • 1 pound shrimp, peeled and deveined

  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the delicata squash in half lengthwise and scoop out the seeds and pulp with a spoon.
  3. Place the squash halves on a baking sheet, cut side up. Drizzle with olive oil and season with salt and pepper. Roast in the preheated oven for 25-30 minutes, or until tender.
  4. While the squash is roasting, heat a tablespoon of olive oil in a large skillet over medium heat.
