Ingredients
- 1 tablespoon olive oil
- 1/2 cup diced onion
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes
- 2 cups baby spinach
- 1/2 cup heavy cream
- 1/2 cup shredded parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 pound medium shrimp, peeled and deveined
- 1/4 cup white wine
- 3 zucchini, spiralized
Directions
- Heat the oil in a large skillet over medium heat. Add the onion and cook for 3 minutes, stirring occasionally.
- Add the garlic and red pepper flakes and cook for an additional minute.
- Add the spinach and cook until wilted, about 2 minutes.
- Add the cream, parmesan cheese, salt and pepper and stir to combine.
- Add the shrimp and cook until pink, about 3 minutes.
- Add the wine and bring to a simmer. Cook for an additional 2 minutes.
- Add the zoodles and cook until just tender, about 3 minutes.
- Serve warm.
