Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1 clove garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 2 cups baby spinach
  • 1/2 cup heavy cream
  • 1/2 cup shredded parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 pound medium shrimp, peeled and deveined
  • 1/4 cup white wine
  • 3 zucchini, spiralized

Directions

  1. Heat the oil in a large skillet over medium heat. Add the onion and cook for 3 minutes, stirring occasionally.
  2. Add the garlic and red pepper flakes and cook for an additional minute.
  3. Add the spinach and cook until wilted, about 2 minutes.
  4. Add the cream, parmesan cheese, salt and pepper and stir to combine.
  5. Add the shrimp and cook until pink, about 3 minutes.
  6. Add the wine and bring to a simmer. Cook for an additional 2 minutes.
  7. Add the zoodles and cook until just tender, about 3 minutes.
  8. Serve warm.
