Ingredients

  • 1 cup pearl barley
  • 1 cup fresh or frozen corn
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped fresh parsley
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Directions

  1. Bring a pot of water to a boil and add the barley. Cook for the recommended time on the package.
  2. Drain the barley and rinse with cold water. Add the barley to a large bowl.
  3. Add the corn, red onion, and parsley to the bowl. Toss to combine.
  4. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, garlic, salt, and pepper to make the dressing.
  5. Pour the dressing over the salad and toss to coat.
  6. Serve immediately or chill in the refrigerator until ready to serve.
