Ingredients
- 1 cup pearl barley
- 1 cup fresh or frozen corn
- 1/4 cup finely chopped red onion
- 1/4 cup finely chopped fresh parsley
- 1/4 cup freshly squeezed lemon juice
- 2 tablespoons olive oil
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and pepper, to taste
Directions
- Bring a pot of water to a boil and add the barley. Cook for the recommended time on the package.
- Drain the barley and rinse with cold water. Add the barley to a large bowl.
- Add the corn, red onion, and parsley to the bowl. Toss to combine.
- In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, garlic, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss to coat.
- Serve immediately or chill in the refrigerator until ready to serve.
