Ingredients

  • 4 large onions, finely chopped
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 2 green chilies, finely chopped
  • 1 teaspoon ginger, grated
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1 teaspoon sugar
  • 1 tablespoon lemon juice
  • Salt to taste
  • Fresh cilantro, for garnish

Directions

  1. Heat vegetable oil in a pan over medium heat.
  2. Add cumin seeds and mustard seeds. Cook until the seeds start to sizzle and crackle.
  3. Add the finely chopped onions, green chilies, ginger, and garlic to the pan. Saute until the onions turn translucent.
  4. Reduce the heat and add turmeric powder, red chili powder, garam masala, sugar, and salt to the pan. Mix well to coat the onions with the spices.
  5. Cook the mixture for 5-7 minutes, stirring occasionally, until the onions are soft and aromatic.
  6. Remove the pan from heat and let the mixture cool down for a few minutes.
  7. Transfer the mixture to a blender or food processor. Add lemon juice and blend until smooth.
  8. Pour the chutney into a serving bowl and garnish with fresh cilantro.
