Ingredients

  • 1 lb scallops
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup diced papaya
  • 1/4 cup diced red onion
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons honey
  • 1 teaspoon cayenne pepper
  • 1/4 cup chopped fresh cilantro

Directions

  1. Heat the olive oil and butter in a large skillet over medium-high heat.
  2. Season the scallops with garlic powder, onion powder, salt, and pepper.
  3. Add the scallops to the skillet and cook for 3-4 minutes on each side, or until cooked through.
  4. While the scallops are cooking, combine the papaya, red onion, lime juice, honey, and cayenne pepper in a small bowl.
