Ingredients

  • 1 cup couscous
  • 1 cup vegetable broth
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt

Directions

  1. In a medium saucepan, bring the vegetable broth to a boil.
  2. Add the couscous, reduce the heat to low, and simmer for 10 minutes.
  3. Remove from the heat and fluff with a fork. Set aside to cool.
  4. In a large bowl, combine the couscous, cucumber, bell pepper, tomatoes, feta cheese, and mint.

  6. Pour the dressing over the salad and mix until everything is well combined.
