Ingredients

  • 2 cups warm water
  • 2 tablespoons active dry yeast
  • 2 tablespoons honey
  • 2 teaspoons salt
  • 2 tablespoons olive oil
  • 4-5 cups whole wheat flour
  • 2 tablespoons sesame seeds, optional

Directions

  1. In a large bowl, combine warm water, yeast, honey, salt, and olive oil. Stir until the yeast is dissolved.
  2. Add the flour, 1 cup at a time, stirring until the dough becomes too stiff to stir. Turn the dough out onto a floured surface and knead for 5-7 minutes, until the dough is elastic and slightly sticky.
  3. Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for 45 minutes.
  4. Punch the dough down, turn out onto a floured surface, and form into a round loaf. Place the loaf on a greased baking sheet, cover with a damp cloth, and let rise for 30 minutes.
  5. Preheat oven to 375 degrees F (190 degrees C). Brush the loaf with water and sprinkle with sesame seeds, if desired.
  6. Bake for 30-35 minutes, or until golden brown. Cool before slicing.
