Ingredients

  • 2 pounds frozen potatoes
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 4 cups chicken stock
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons chopped fresh parsley

Directions

  1. Add the frozen potatoes, garlic, onion, chicken stock, Italian seasoning, garlic powder, salt and pepper to the Instant Pot.
  2. Secure the lid and set the pressure release valve to sealing. Select manual/pressure cook and set the timer for 5 minutes.
  3. Once the cooking time is done, do a quick pressure release. Open the lid and stir the soup.
  4. Add the heavy cream, butter, and parsley and stir to combine. Taste and adjust the seasoning, if needed.
  5. Serve the soup hot, with your favorite toppings.
