Ingredients
- 4 cups mashed sweet potatoes
- 1/2 cup butter, melted
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 2 eggs, beaten
- 1/2 cup chopped pecans
- 1/2 cup mini marshmallows
Directions
- Preheat oven to 350°F.
- In a large bowl, mix together the mashed sweet potatoes, melted butter, brown sugar, vanilla extract, and beaten eggs.
- Pour the sweet potato mixture into an 8x8-inch baking dish.
- Sprinkle the chopped pecans over the top of the sweet potato mixture.
- Bake in preheated oven for 30 minutes.
- Remove from oven and sprinkle mini marshmallows over the top. Return to oven and bake for an additional 15 minutes.
- Remove from oven and let cool before serving.
