Scrumptious Sweet Potato Casserole

Ingredients

• 4 cups mashed sweet potatoes
• 1/2 cup butter, melted
• 1/2 cup brown sugar
• 1 teaspoon vanilla extract
• 2 eggs, beaten
• 1/2 cup chopped pecans
• 1/2 cup mini marshmallows

Directions

1. Preheat oven to 350°F.
2. In a large bowl, mix together the mashed sweet potatoes, melted butter, brown sugar, vanilla extract, and beaten eggs.
3. Pour the sweet potato mixture into an 8x8-inch baking dish.
4. Sprinkle the chopped pecans over the top of the sweet potato mixture.
5. Bake in preheated oven for 30 minutes.
6. Remove from oven and sprinkle mini marshmallows over the top. Return to oven and bake for an additional 15 minutes.
7. Remove from oven and let cool before serving.
