Ingredients

  • 1/2 cup ricotta cheese
  • 1/2 cup finely chopped fresh spinach
  • 1/2 cup finely chopped mushrooms
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • 2 tablespoons olive oil
  • 1/2 pound flatbread dough, thawed if frozen

Directions

  1. In a medium bowl, combine the ricotta, spinach, mushrooms, Parmesan cheese, parsley, black pepper, garlic powder, onion powder, oregano, basil, and thyme. Mix until well combined.
  2. Preheat oven to 400°F (200°C). Grease a baking sheet with olive oil.
  3. On a lightly floured surface, roll out the flatbread dough into a large rectangle.
  4. Spread the ricotta mixture onto the dough, leaving a 1-inch (2.5 cm) border around the edges.
  5. Fold the dough over the filling, pressing the edges together to seal.
  6. Brush the top of the dough with olive oil.
  7. Bake for 20-25 minutes, or until golden brown.
  8. Remove from oven and let cool for 5 minutes before serving.
