Ingredients
1 tablespoon olive oil
1 onion, chopped
1 pound lean ground beef
2 cloves garlic, minced
2 cups vegetables, such as bell peppers, carrots, and/or broccoli, chopped

1 (14.5 ounce) can diced tomatoes
1 cup shredded cheddar cheese
Directions
Heat the olive oil in a large skillet over medium heat. Add the onion and cook for 2 minutes.
Add the ground beef and garlic and cook, stirring occasionally, until the beef is cooked through, about 5 minutes.
Add the vegetables, Italian seasoning, salt, and pepper and cook until the vegetables are tender, about 5 minutes.
Stir in the tomatoes and cook for 3 minutes.
Sprinkle the cheese over the top of the skillet and cook until the cheese is melted, about 2 minutes.
Serve hot.
