Cheddar-Topped Veggie-Beef Skillet Dinner

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 pound lean ground beef
  • 2 cloves garlic, minced
  • 2 cups vegetables, such as bell peppers, carrots, and/or broccoli, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 (14.5 ounce) can diced tomatoes
  • 1 cup shredded cheddar cheese

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and cook for 2 minutes.
  2. Add the ground beef and garlic and cook, stirring occasionally, until the beef is cooked through, about 5 minutes.
  3. Add the vegetables, Italian seasoning, salt, and pepper and cook until the vegetables are tender, about 5 minutes.
  4. Stir in the tomatoes and cook for 3 minutes.
  5. Sprinkle the cheese over the top of the skillet and cook until the cheese is melted, about 2 minutes.
  6. Serve hot.
