Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup plum preserves
  • 2 tablespoons soy sauce
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 2 garlic cloves, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the mozzarella cheese, Parmesan cheese, breadcrumbs, thyme, rosemary, salt, and black pepper.
  3. Using a sharp knife, cut a pocket into each chicken breast, being careful not to cut all the way through.
  4. Stuff each chicken breast with the cheese and herb mixture, pressing down gently to close the opening.
  5. Heat the olive oil in an oven-safe skillet over medium-high heat.
  6. Place the stuffed chicken breasts in the skillet and cook for 2-3 minutes on each side until browned.
  7. In a separate bowl, whisk together the plum preserves, soy sauce, balsamic vinegar, Dijon mustard, and minced garlic.
  8. Pour the plum glaze over the chicken breasts in the skillet.
  9. Transfer the skillet to the preheated oven and bake for 25-30 minutes until the chicken is cooked through and the glaze is bubbly.
  10. While the chicken is baking, prepare the glaze thickener by mixing cornstarch and water in a small bowl.
  11. Remove the skillet from the oven and transfer the chicken breasts to a serving plate.
  12. Place the skillet back on the stovetop over medium heat and whisk in the cornstarch mixture.
  13. Cook, stirring constantly, until the glaze thickens and coats the back of a spoon.
  14. Remove the glaze from the heat and drizzle it over the stuffed chicken breasts.
  15. Serve the savory stuffed chicken breast with plum glaze hot with your choice of side dish.
