Enjoy a twist on the classic beef Bourguignon with this savory beef meatball version. Tender beef meatballs simmered in a rich red wine and vegetable sauce, served over a bed of creamy mashed potatoes.

Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan
  • 1 egg
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 1/2 cup red wine
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • 1 bay leaf
  • 1 tsp thyme
  • 1 lb potatoes, peeled and diced
  • 1/4 cup milk
  • 2 tbsp butter
  • Salt and pepper to taste

Directions

  1. In a bowl, mix ground beef, breadcrumbs, Parmesan, egg, salt, and pepper. Form into meatballs.
  2. Heat olive oil in a large skillet over medium heat. Brown the meatballs on all sides, then remove from the skillet.
  3. In the same skillet, sauté onion, garlic, and carrots until softened. Add red wine, beef broth, tomato paste, bay leaf, and thyme. Bring to a simmer.
  4. Return the meatballs to the skillet. Cover and simmer for 30 minutes.
  5. Meanwhile, boil potatoes in salted water until tender. Drain and mash with milk, butter, salt, and pepper.
  6. Serve the beef meatballs and sauce over the mashed potatoes. Enjoy!
