Ingredients
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan
- 1 egg
- 1 tsp salt
- 1 tsp pepper
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 1/2 cup red wine
- 1 cup beef broth
- 1 tbsp tomato paste
- 1 bay leaf
- 1 tsp thyme
- 1 lb potatoes, peeled and diced
- 1/4 cup milk
- 2 tbsp butter
- Salt and pepper to taste
Directions
- In a bowl, mix ground beef, breadcrumbs, Parmesan, egg, salt, and pepper. Form into meatballs.
- Heat olive oil in a large skillet over medium heat. Brown the meatballs on all sides, then remove from the skillet.
- In the same skillet, sauté onion, garlic, and carrots until softened. Add red wine, beef broth, tomato paste, bay leaf, and thyme. Bring to a simmer.
- Return the meatballs to the skillet. Cover and simmer for 30 minutes.
- Meanwhile, boil potatoes in salted water until tender. Drain and mash with milk, butter, salt, and pepper.
