Ingredients
- 1 medium-sized pumpkin
- 1 lb sausage, casings removed
- 1 cup bread crumbs
- 1 cup shredded cheese (such as cheddar or Gruyere)
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tbsp fresh herbs (such as thyme, rosemary, and sage), chopped
- Salt and pepper to taste

Directions
- Preheat the oven to 375°F.
- Cut the top off the pumpkin and scoop out the seeds and stringy flesh.
- In a skillet, cook the sausage over medium heat until browned, breaking it up with a spoon.
- Add the diced onion and garlic to the skillet and cook until softened.
