Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup ice water
  • 1 small zucchini, thinly sliced
  • 1 small yellow squash, thinly sliced
  • 1 small red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 4 ounces goat cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Directions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add the ice water and mix until the dough comes together.
