Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 2 cups vegetable broth
  • 1 (14 oz) can diced tomatoes
  • 1/2 cup white wine
  • 1/2 pound salmon, cubed
  • 2 cups turnip greens, chopped
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, carrots, and celery and cook until the vegetables are tender, about 5 minutes.
  3. Add the oregano, thyme and paprika and cook for 1 minute.
  4. Add the vegetable broth, diced tomatoes, and white wine. Bring to a boil then reduce heat to low and simmer for 10 minutes.
  5. Add the salmon and turnip greens and simmer for another 10 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot.
