Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 pound ground beef
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1/2 cup peanut butter
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook for 3 minutes, stirring occasionally.
  2. Add the bell pepper and ground beef and cook until the beef is cooked through, about 5 minutes. Drain any excess fat.
  3. Add the chili powder, cumin, paprika, oregano, diced tomatoes, and black beans and stir to combine. Bring to a simmer and cook for 10 minutes.
  4. Add the peanut butter and stir until combined. Season with salt and pepper, to taste.
  5. Serve hot with your favorite toppings.
