Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 cup long-grain white rice
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 cup diced tomatoes
  • 2 cups vegetable broth

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and cook until softened, about 5 minutes.
  3. Stir in the rice and garlic and cook for 2 minutes.
  4. Stir in the paprika, cumin, and tomatoes and cook for 1 minute.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Reduce the heat to low, cover the skillet, and simmer for 15 minutes.
  7. Remove the skillet from the heat and let stand, covered, for 5 minutes.
  8. Fluff the rice with a fork and serve.
