Ingredients

  • 2 skinless salmon fillets
  • 1/2 lemon, sliced
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup baby potatoes, halved
  • 1/2 cup cherry tomatoes, halved
  • 2 tablespoons chopped fresh parsley

Directions

  1. Preheat oven to 375°F (190°C).
  2. Cut two large pieces of foil and place each piece of salmon in the center.
  3. Top each piece of salmon with lemon slices, garlic powder, paprika, oregano, salt, pepper, and olive oil.
  4. Top with potatoes and tomatoes.
  5. Fold up the sides of the foil and seal the packets closed.
  6. Place foil packets on a baking sheet and bake for 18 minutes, or until the salmon is cooked through.
  7. Carefully open the packets and top with fresh parsley.
  8. Serve and enjoy!
