Ingredients

  • 1/2 lb. boneless, skinless chicken breasts, cut into 1/2-inch cubes
  • 1 lb. Chinese egg noodles
  • 1/4 cup creamy peanut butter
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons sesame oil
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup diced scallions
  • 1 red bell pepper, seeded and diced
  • 1/4 cup chopped peanuts

Directions

  1. In a large pot of boiling water, cook the noodles according to package directions. Drain and rinse with cold water. Set aside.
  2. In a large skillet over medium-high heat, cook the chicken cubes until golden brown, about 5 minutes. Remove from heat and set aside.
  3. In a medium bowl, whisk together the peanut butter, rice vinegar, soy sauce, brown sugar, ginger, and sesame oil until smooth. Set aside.
  4. In a large bowl, combine the cooked noodles, chicken, cilantro, scallions, bell pepper, and peanuts. Pour the dressing over the noodle mixture and toss to combine.
  5. Serve cold or at room temperature.
