Ingredients
- 1/2 lb. boneless, skinless chicken breasts, cut into 1/2-inch cubes
- 1 lb. Chinese egg noodles
- 1/4 cup creamy peanut butter
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 teaspoon grated fresh ginger
- 2 tablespoons sesame oil
- 1/2 cup chopped fresh cilantro
- 1/2 cup diced scallions
- 1 red bell pepper, seeded and diced
- 1/4 cup chopped peanuts
Directions
- In a large pot of boiling water, cook the noodles according to package directions. Drain and rinse with cold water. Set aside.
- In a large skillet over medium-high heat, cook the chicken cubes until golden brown, about 5 minutes. Remove from heat and set aside.
- In a medium bowl, whisk together the peanut butter, rice vinegar, soy sauce, brown sugar, ginger, and sesame oil until smooth. Set aside.
- In a large bowl, combine the cooked noodles, chicken, cilantro, scallions, bell pepper, and peanuts. Pour the dressing over the noodle mixture and toss to combine.
- Serve cold or at room temperature.
