Ingredients

  • 2 tablespoons olive oil
  • 2 pounds lamb, cubed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 1 cup beef stock
  • 1 cup red wine
  • 1/4 cup chopped fresh parsley

Directions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the lamb cubes and cook until browned, about 5 minutes.
  3. Add the onion, garlic, carrots, and celery and cook until softened, about 5 minutes.
  4. Stir in the cumin, coriander, oregano, paprika, salt, and pepper and cook for 1 minute.
  5. Add the tomatoes, beef stock, and red wine and bring to a boil.
  6. Reduce heat to low and simmer for 45 minutes, stirring occasionally.
  7. Stir in the parsley and serve hot.
