Ingredients
1 cup moong dal
1 onion, chopped
2 cloves garlic, minced
1 teaspoon ginger, minced
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 teaspoon turmeric powder
1 teaspoon garam masala
1 teaspoon chili powder, or to taste
2 cups spinach, chopped
1 tomato, chopped
1 teaspoon salt, or to taste
2 tablespoons oil
1 teaspoon lemon juice
Directions
Wash and soak the moong dal in 2 cups of water for 15 minutes.
Heat oil in a pan over medium heat. Add the cumin seeds and let them sizzle.
Add the chopped onion and sauté until it starts to turn golden brown.
Add the garlic and ginger and sauté for 1 minute.
Add the coriander powder, turmeric powder, garam masala, and chili powder. Stir to combine and cook for 1 minute.
Add the drained moong dal and 2 cups of water. Stir and bring to a boil.
Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
Add the chopped spinach, tomato, salt, and lemon juice. Stir to combine and cook for 5 minutes.
Serve hot with rice or roti.
