Heat olive oil in a large pot over medium heat. Add onion, garlic, bell pepper, potatoes, carrots, and celery, and cook for about 5 minutes, stirring occasionally.
Add sausage and cook for another 5 minutes, stirring occasionally.
Add diced tomatoes, beef broth, oregano, basil, thyme, and season with salt and pepper. Bring to a boil, then reduce heat to low and simmer for 15 minutes.
Serve with freshly cooked pasta, crusty bread, or over mashed potatoes.
