Ingredients
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- 1/4 cup jalapeno, minced
- 1 cup mozzarella cheese, shredded
Directions
- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla.
- Combine the flour, baking powder, baking soda, and salt; stir into the creamed mixture.
- Stir in the jalapeno and mozzarella cheese.
- Drop by teaspoonfuls onto ungreased cookie sheets.
- Bake for 10 to 12 minutes in the preheated oven, until golden brown.
- Remove to cool on wire racks.
