Roasted Portabello Mushrooms with Blue Cheese

Ingredients

  • 4 portabello mushrooms
  • 1 cup blue cheese crumbles
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh thyme, chopped
  • 1 teaspoon coarse salt
  • 1/2 teaspoon freshly ground black pepper

Directions

  1. Preheat oven to 375 degrees F.
  2. In a small bowl, mix together the olive oil, garlic, thyme, salt and pepper.
  3. Brush the mushrooms with the olive oil mixture and place on a baking sheet.
  4. Bake for 25 minutes.
  5. Remove from the oven and sprinkle with blue cheese crumbles.
  6. Bake for an additional 5 minutes, or until cheese is melted and mushrooms are tender.
  7. Serve and enjoy!
