Ingredients
- 1 pork loin
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon olive oil
- 3 carrots, peeled and chopped
- 1 onion, chopped
- 1 clove garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1/2 teaspoon ground cinnamon
- 1/2 cup dry white wine
- 1/2 cup vegetable broth
- 1/2 cup slivered almonds
- 2 tablespoons tomato paste
- 3 tablespoons red wine vinegar
Directions
- Preheat oven to 350°F.
- Season the pork loin with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the pork loin and sear until golden brown on all sides, about 8 minutes.
- Transfer the pork to a roasting pan and roast for 25 minutes, or until the internal temperature of the pork reaches 145°F.
- Meanwhile, in the same skillet, sauté the carrots, onion, and garlic until softened, about 5 minutes.
- Add the paprika, cayenne pepper, cinnamon, wine, broth, almonds, tomato paste, and red wine vinegar. Simmer for 15 minutes.
- Transfer the carrot mixture to a blender and blend until smooth. Serve over the roasted pork loin.
