Ingredients

  • 1 pork loin
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon olive oil
  • 3 carrots, peeled and chopped
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup dry white wine
  • 1/2 cup vegetable broth
  • 1/2 cup slivered almonds
  • 2 tablespoons tomato paste
  • 3 tablespoons red wine vinegar

Directions

  1. Preheat oven to 350°F.
  2. Season the pork loin with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add the pork loin and sear until golden brown on all sides, about 8 minutes.
  4. Transfer the pork to a roasting pan and roast for 25 minutes, or until the internal temperature of the pork reaches 145°F.
  5. Meanwhile, in the same skillet, sauté the carrots, onion, and garlic until softened, about 5 minutes.
  6. Add the paprika, cayenne pepper, cinnamon, wine, broth, almonds, tomato paste, and red wine vinegar. Simmer for 15 minutes.
  7. Transfer the carrot mixture to a blender and blend until smooth. Serve over the roasted pork loin.
