Ingredients
1 pork loin
1 teaspoon salt
1 teaspoon pepper
1 tablespoon olive oil
3 carrots, peeled and chopped
1 onion, chopped
1 clove garlic, minced
1 teaspoon paprika

1/2 teaspoon ground cinnamon
1/2 cup dry white wine
1/2 cup vegetable broth

Directions
Preheat oven to 350°F.
Season the pork loin with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add the pork loin and sear until golden brown on all sides, about 8 minutes.
Transfer the pork to a roasting pan and roast for 25 minutes, or until the internal temperature of the pork reaches 145°F.
Meanwhile, in the same skillet, sauté the carrots, onion, and garlic until softened, about 5 minutes.
Add the paprika, cayenne pepper, cinnamon, wine, broth, almonds, tomato paste, and red wine vinegar. Simmer for 15 minutes.
Transfer the carrot mixture to a blender and blend until smooth. Serve over the roasted pork loin.
