Ingredients

  • 1 cup pumpkin puree
  • 1/4 cup vegetable oil
  • 1/2 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/4 cup ground flaxseed
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, mix together the pumpkin puree, oil, maple syrup, and vanilla extract.
  3. In a separate bowl, mix together the all-purpose flour, whole wheat flour, ground flaxseed, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in the chopped walnuts, if desired.
  6. Pour the batter into the prepared loaf pan and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool before slicing.
