Ingredients
- 1 cup pumpkin puree
- 1/4 cup vegetable oil
- 1/2 cup pure maple syrup
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1/4 cup ground flaxseed
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts (optional)
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- In a large bowl, mix together the pumpkin puree, oil, maple syrup, and vanilla extract.
- In a separate bowl, mix together the all-purpose flour, whole wheat flour, ground flaxseed, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Mix the dry ingredients into the wet ingredients until just combined.
- Fold in the chopped walnuts, if desired.
- Pour the batter into the prepared loaf pan and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool before slicing.
