In a large bowl, combine the ground beef, cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are evenly distributed.
Divide the mixture into four equal portions and shape into patties. Place one portion of the mixture in between two pieces of plastic wrap and flatten into a patty. Place a slice of cheddar cheese in the center of the patty and fold the edges of the patty over the cheese. Pinch the edges together to ensure the cheese does not leak out.
Repeat with the remaining patties. Preheat a skillet or griddle over medium-high heat and grease with cooking spray. Place the patties on the skillet or griddle and cook for 5-7 minutes per side, or until the patties are cooked through.
Place the cooked patties on the hamburger buns and top with tomato, lettuce, and pickled jalapeno peppers. Serve immediately.
