Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the olive oil, minced garlic, chopped rosemary, thyme, parsley, lemon zest, lemon juice, salt, and pepper.
  3. Add the chicken thighs to the bowl and toss well to coat them evenly with the herb and lemon mixture. Let the chicken marinate in the fridge for at least 30 minutes.
  4. Heat a large oven-safe skillet over medium-high heat. Add the chicken thighs skin-side down and sear them for about 5 minutes, until golden brown. Flip the chicken and sear the other side for another 5 minutes.
