Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, at room temperature
  • 1/2 cup white sugar
  • 1 egg, beaten
  • 1/2 cup milk
  • 1/2 cup ricotta cheese
  • 1/2 cup almond paste
  • 1/4 cup dried cranberries, chopped
  • 1/4 cup chopped almonds
  • 1/4 cup confectioners’ sugar, for dusting

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  2. In a medium bowl, mix together the flour, baking powder, salt, butter, and sugar until crumbly. Add the beaten egg and milk and mix until a soft dough forms.
  3. On a lightly floured surface, roll out the dough to 1/8 inch thickness. Cut into 2-inch circles (or any desired shape). Place 1 teaspoon of the ricotta cheese, almond paste, cranberries, and almonds in the center of each circle.
  4. Fold the circles in half and press the edges together with a fork to seal. Place on the prepared baking sheet.
  5. Bake for 20 minutes, or until golden brown. Sprinkle with confectioners’ sugar before serving.
