Ingredients

  • 1-1/2 pounds boneless, skinless chicken thighs
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup chicken broth
  • 2 large apples, peeled, cored, and cut into wedges
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Directions

  1. Place the chicken in the slow cooker. Add the onion, garlic, thyme, salt, pepper, and chicken broth.
  2. Cover and cook on low for 5 to 6 hours, or on high for 3 to 4 hours.
  3. Add the apples, honey, and vinegar to the slow cooker. Cover and cook on high for 30 minutes.
  4. In a small bowl, whisk together the cornstarch and cold water. Add to the slow cooker and stir to combine.
  5. Cover and cook on high for 15 minutes, or until the sauce has thickened.
  6. Serve over cooked rice or mashed potatoes.
