  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 3 large eggs
  • 1 tablespoon grated lime zest
  • 1/4 cup lime juice
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • Whipped cream, for topping
  • Lime slices, for garnish

Directions

  1. Preheat the oven to 325°F (165°C).
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese, sugar, and flour until smooth and creamy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Mix in the lime zest, lime juice, vanilla extract, and sour cream until well combined.
  6. Pour the cheesecake batter over the prepared crust in the springform pan.
  7. Bake for 55-60 minutes or until the center is set and the top is lightly golden.
  8. Remove the cheesecake from the oven and let it cool in the pan for 10 minutes.
  9. Run a knife around the edge of the pan to loosen the cheesecake, then remove the sides of the pan.
