Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 cup heavy cream
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced
  • ½ cup fresh blueberries
  • ½ cup fresh raspberries
  • ½ cup fresh blackberries
  • ¼ cup apricot jam
  • 2 tablespoons lemon juice

Directions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix well until the crumbs are evenly coated.
  3. Press the crumb mixture into the bottom and up the sides of a 9-inch pie dish. Use the back of a spoon to press the crumbs firmly. Bake the crust in the preheated oven for 10 minutes, then remove and set aside to cool.
  4. In a large mixing bowl, beat the heavy cream until stiff peaks form. Set aside.
  5. In another bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
