Ingredients
2 lb. pork roast
4 cloves garlic, minced
2 teaspoons oregano
1 teaspoon rosemary
2 tablespoons olive oil
1 cup red wine
1 teaspoon salt
1 teaspoon pepper
Directions
Preheat oven to 350 degrees F.
In a small bowl, mix together garlic, oregano, rosemary, olive oil, red wine, salt, and pepper.
Place pork roast in a roasting pan. Pour garlic-wine mixture over pork.
Cover roasting pan with aluminum foil.
Bake in preheated oven for 45 minutes.
Uncover and bake for an additional 15 minutes, or until pork is cooked through.
Let pork rest for 10 minutes before slicing.
Serve hot with mashed potatoes and green beans.
