Ingredients

  • 2 red snapper fillets
  • 1 lemon, sliced
  • 4 sprigs fresh thyme
  • 4 sprigs fresh rosemary
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Directions

  1. Preheat your oven to 375°F (190°C).
  2. Cut two large pieces of parchment paper, big enough to wrap each red snapper fillet.
  3. Place one red snapper fillet on each of the parchment paper.
  4. Season the red snapper fillets with salt and pepper.
  5. Divide the minced garlic equally and spread it over the fillets.
  6. Place a few slices of lemon on top of the fillets, followed by the sprigs of thyme and rosemary.
  7. Drizzle each fillet with a tablespoon of olive oil.
  8. Fold the parchment paper over the red snapper fillets, covering them completely.
  9. Starting at one end, make small folds along the edge of the paper, sealing it tightly.
  10. Repeat this process for the other three sides, folding and tucking the paper to create a secure package.
  11. Place the parchment paper packets on a baking sheet.
  12. Bake in the preheated oven for 15-20 minutes, or until the red snapper is cooked through and flakes easily with a fork.
  13. Carefully open the parchment paper packets, being cautious of the hot steam.
  14. Serve the red snapper fillets on plates, drizzling any juices from the packets over the fish.
  15. Garnish with fresh herbs and lemon slices, if desired.
  16. Enjoy your delicious red snapper in parchment paper!
