Ingredients

  • 1 head of red cabbage, shredded
  • 1 can of chickpeas, drained and rinsed
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of fresh mint, chopped
  • 1/4 cup of red onion, diced
  • 1/4 cup of extra virgin olive oil
  • 2 tablespoons of apple cider vinegar
  • 2 tablespoons of dijon mustard
  • 1 teaspoon of honey
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the red cabbage, chickpeas, parsley, mint, and red onion.
  2. In a separate bowl, whisk together the olive oil, vinegar, mustard, honey, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately or chill for up to 2 hours before serving.
