Ingredients

  • 1 cup cooked quinoa
  • 1 cup rolled oats
  • 1/4 cup cocoa powder
  • 1/4 cup honey
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup chopped walnuts or other nuts (optional)
  • 1/2 cup dark chocolate chips (optional)

Directions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix together the cooked quinoa, oats, cocoa powder, honey, salt, and baking soda.
  3. Stir in the chopped walnuts and chocolate chips, if using.
  4. Drop spoonfuls of the cookie dough onto a parchment-lined baking sheet.
  5. Bake for 10-12 minutes or until the cookies are golden brown.
  6. Remove from the oven and let cool for a few minutes before transferring to a wire rack to cool completely.
