Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 onion, diced

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup barbecue sauce
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1/4 cup tomato paste
  • 1 tablespoon Worcestershire sauce

Directions

  1. Place the chicken breasts in the instant pot.
  2. Add the chicken broth, diced onion, minced garlic, chili powder, smoked paprika, cumin, salt, and black pepper to the pot.
  3. Close the lid and set the instant pot to manual high pressure for 15 minutes.
  4. Once the cooking time is complete, do a quick release of the pressure.
  5. Remove the chicken from the instant pot and shred it using two forks.
