This quick and easy ginger pork stir fry is a perfect weeknight meal that is packed with flavor. The combination of tender pork, fresh vegetables, and aromatic ginger sauce will leave you craving for more.

Ingredients

  • 1 lb pork tenderloin, thinly sliced
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 cup chicken broth
  • 2 green onions, sliced
  • Cooked rice, for serving

Directions

  1. In a bowl, mix soy sauce, oyster sauce, rice vinegar, and cornstarch. Add pork slices and marinate for 10 minutes.
  2. Heat vegetable oil in a wok or skillet over high heat. Add pork slices and stir fry until browned. Remove and set aside.
  3. In the same pan, add bell pepper, onion, garlic, and ginger. Stir fry for 2-3 minutes.
  4. Add chicken broth and the pork slices back to the pan. Stir well and cook for another 2-3 minutes.
  5. Garnish with green onions and serve hot with rice.
