Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 cup sliced mushrooms
  • 1/2 cup Marsala wine
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh parsley, for garnish

Directions

  1. In a shallow dish, combine the flour, salt, and black pepper. Dredge the chicken breasts in the flour mixture, shaking off any excess.
  2. In a large skillet, melt 2 tablespoons of butter and 1 tablespoon of olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining 2 tablespoons of butter and 1 tablespoon of olive oil. Add the sliced mushrooms and cook until they release their moisture and start to brown, about 5 minutes.
  4. Pour in the Marsala wine and chicken broth, scraping the bottom of the skillet to release any browned bits. Bring the mixture to a simmer and cook for 5 minutes, allowing the flavors to meld together.
  5. Stir in the heavy cream and return the chicken breasts to the skillet. Cook for an additional 2-3 minutes, until the sauce thickens slightly and the chicken is heated through.
  6. Garnish with chopped parsley and serve hot with your choice of pasta, rice, or mashed potatoes. Enjoy!
