Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into small cubes
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) corn kernels, drained
  • 1 cup chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced green onions

Directions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the chicken cubes and cook until browned, about 5 minutes. Remove the chicken from the pot and set aside.
  3. In the same pot, add the diced onion, minced garlic, and diced bell pepper. Cook until the vegetables are softened, about 5 minutes.
  4. Add the diced tomatoes, black beans, kidney beans, corn kernels, chicken broth, chili powder, cumin, paprika, oregano, salt, and pepper. Stir well to combine.
  5. Bring the chili to a simmer and let it cook for 15-20 minutes, until the flavors meld together.
  6. Return the cooked chicken to the pot and let it simmer for an additional 5 minutes.
  7. Serve hot with optional toppings such as shredded cheese, sour cream, chopped cilantro, and sliced green onions.
