Ingredients
- 2 cups basmati rice
- 500g chicken or lamb, cut into pieces
- 1 large onion, thinly sliced
- 2 tomatoes, chopped
- 4 green chilies, slit
- 2 tablespoons ginger-garlic paste
- 1 tablespoon biryani masala powder
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/2 cup plain yogurt
- 1/4 cup fresh cilantro leaves, chopped
- 1/4 cup fresh mint leaves, chopped
- 4 cups water
- 3 tablespoons ghee or vegetable oil
- Salt to taste
Directions
- Wash the basmati rice in cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- Heat ghee or vegetable oil in a large deep pan over medium heat. Add the sliced onions and sauté until golden brown.
- Add the ginger-garlic paste and sauté for another minute until fragrant.
- Add the chicken or lamb pieces to the pan and cook until they are browned on all sides.
- Stir in the chopped tomatoes, green chilies, biryani masala powder, turmeric powder, red chili powder, and salt. Cook for a few minutes until the tomatoes are soft and the spices are well combined.
- Add the plain yogurt, cilantro leaves, and mint leaves to the pan. Mix well.
- Add the soaked and drained basmati rice to the pan, followed by water. Stir gently to combine everything.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pan with a tight-fitting lid and simmer for 20-25 minutes until the rice is cooked and the flavors are infused.
- Remove the pan from heat and let it sit for 5 minutes before opening the lid. Fluff the rice gently with a fork.
- Serve the South Indian Biryani hot with raita or plain yogurt on the side.
