Ingredients

  • 8 oz fettuccine pasta
  • 4 salmon fillets
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 teaspoon nutmeg
  • 1/4 cup chopped fresh parsley, for garnish

Directions

  1. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
  2. Season the salmon fillets with salt and pepper on both sides.
  3. Heat olive oil in a large skillet over medium heat. Add the salmon fillets and cook for about 4-5 minutes per side, or until cooked through. Remove the salmon from the skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  5. Reduce the heat to low and add heavy cream, Parmesan cheese, mozzarella cheese, and nutmeg to the skillet. Stir well until the cheese is melted and the sauce is smooth and creamy.
  6. Add the cooked fettuccine pasta to the skillet and toss to coat the pasta evenly with the sauce.
  7. Place the salmon fillets on top of the pasta and cover the skillet. Let it cook on low heat for 2-3 minutes to allow the flavors to meld together.
  8. Remove from heat and garnish with chopped fresh parsley.
  9. Serve hot and enjoy!
