Ingredients

  • 1 lb pork tenderloin, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/4 cup orange juice
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 green onions, chopped for garnish
  • Steamed rice or noodles, for serving

Directions

  1. In a small bowl, whisk together orange juice, soy sauce, honey, cornstarch, and water. Set aside.
  2. Heat vegetable oil in a large skillet or wok over high heat. Add the pork slices and stir-fry until browned and cooked through. Remove the pork from the skillet and set aside.
  3. In the same skillet, add bell pepper and carrot. Stir-fry for 2-3 minutes until they start to soften.
  4. Add minced garlic and grated ginger to the skillet. Cook for another 1 minute.
  5. Pour the prepared orange sauce into the skillet. Stir well to coat the vegetables.
  6. Return the cooked pork slices to the skillet. Add red pepper flakes if desired. Stir-fry for an additional 2-3 minutes until the sauce thickens and coats the pork and vegetables evenly.
  7. Remove from heat and garnish with chopped green onions.
