Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 cup mushrooms, sliced
  • 1 block firm tofu, cubed
  • 3 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon grated ginger
  • 1 teaspoon cornstarch
  • 1/4 cup water
  • 2 green onions, chopped
  • Cooked rice or noodles, for serving

Directions

  1. Heat one tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the sliced onion and minced garlic to the skillet. Stir fry for 2-3 minutes until the onion is translucent.
  3. Add the sliced red and yellow bell peppers, julienned carrot, broccoli florets, snap peas, and sliced mushrooms to the skillet. Stir fry for another 5 minutes until the vegetables are tender-crisp.
  4. Remove the vegetables from the skillet and set aside.
  5. In the same skillet, heat the remaining tablespoon of vegetable oil.
  6. Add the cubed tofu and cook for 5-7 minutes until lightly golden.
  7. While the tofu is cooking, prepare the sauce by whisking together the soy sauce, hoisin sauce, maple syrup, grated ginger, cornstarch, and water in a small bowl.
  8. Pour the sauce over the tofu in the skillet and stir to coat the tofu evenly. Cook for an additional 2-3 minutes until the sauce thickens.
  9. Add the stir-fried vegetables back to the skillet and toss everything together to combine. Cook for another 2 minutes to heat through.
  10. Remove from heat and garnish with chopped green onions.
