Ingredients

  • 4 (10-inch) flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced onion
  • 1/4 cup diced jalapeno pepper
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Sour cream, for serving (optional)
  • Salsa, for serving (optional)

Directions

  1. Heat the olive oil in a skillet over medium-high heat.
  2. Add the red bell pepper, onion, and jalapeno pepper to the skillet and cook, stirring often, until the vegetables are tender, about 5 minutes.
  3. Remove the vegetables from the skillet and set aside.
  4. Place two of the tortillas on a work surface. Divide the cheese, cooked vegetables, and salt and pepper evenly between the two tortillas.
  5. Top each tortilla with the remaining two tortillas.
  6. Heat a skillet over medium-high heat. Place the quesadillas in the skillet and cook, turning once, until the cheese is melted and the tortillas are golden brown, about 5 minutes per side.
  7. Remove the quesadillas from the skillet and cut into wedges.
  8. Serve with sour cream and salsa, if desired.
