Ingredients

  • 1/2 cup butter, melted
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 2 cups fresh blueberries
  • 2 tablespoons lemon juice
  • 1/2 cup heavy cream
  • 1/4 cup white sugar
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch springform pan.
  2. In a medium bowl, mix together the melted butter, flour, sugar, cornstarch, and salt. Press into the bottom and up the sides of the prepared pan.
  3. In a medium bowl, mix together the blueberries, lemon juice and 1/4 cup of sugar. Spoon the mixture into the crust.
  4. In a medium bowl, beat together the cream, 1/4 cup sugar, and vanilla. Pour over the blueberry mixture.
  5. Bake for 40 minutes in the preheated oven, or until golden brown.
  6. Remove from oven and let cool before serving.
