  • 1/3 cup dark chocolate chips

Directions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a blender, combine the canned pumpkin, ripe bananas, eggs, Greek yogurt, honey, and vanilla extract. Blend until smooth and well combined.
  3. Add the old-fashioned oats, protein powder, baking powder, baking soda, cinnamon, nutmeg, ground ginger, and salt to the blender. Blend again until all the ingredients are fully incorporated.
  4. Fold in the dark chocolate chips and chopped walnuts, reserving a few for topping.
  5. Divide the batter evenly among the prepared muffin cups, filling each about 3/4 of the way.
  6. Sprinkle the reserved dark chocolate chips and chopped walnuts over the muffins.
  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove from the oven and allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
