Ingredients

  • 4 ounces bacon, diced
  • 1/2 cup diced onion
  • 1 tablespoon garlic, minced
  • 1 cup beer
  • 1 (16-ounce) package dried butter beans
  • 2 cups chicken broth
  • 1 teaspoon dried thyme
  • Kosher salt and freshly ground black pepper, to taste

  1. In the pressure cooker, heat the bacon over medium heat. Cook until the bacon is crisp, about 5 minutes. Add the onions and garlic and cook until the onions are softened, about 3 minutes.
  2. Pour in the beer and deglaze the pan. Cook until the liquid is reduced by half, about 3 minutes.
  3. Add the butter beans, chicken broth, and thyme. Stir to combine.
  4. Cover the pressure cooker and cook on high pressure for 25 minutes. Quick-release the pressure and open the lid.
