Ingredients
- 2 tablespoons of olive oil
- 1 onion, diced
- 1 bell pepper, diced
- 2 stalks of celery, diced
- 3 cloves of garlic, minced
- 1 teaspoon of Cajun seasoning
- 1 teaspoon of oregano
- 1 teaspoon of smoked paprika
- 2 cups of long-grain rice
- 4 cups of chicken stock
- 1 pound of shrimp, peeled and deveined
- 1/2 cup of parsley, chopped
Directions
- Preheat oven to 375°F.
- Heat the olive oil in a large oven-safe skillet over medium heat.
- Add the onion, bell pepper, celery, and garlic and cook until vegetables are softened, about 5 minutes.
- Stir in the Cajun seasoning, oregano, and smoked paprika and cook until fragrant, about 1 minute.
- Add the rice and stir to combine. Cook for 2 minutes.
- Add the chicken stock and stir to combine. Bring to a boil.
- Remove the skillet from the heat and stir in the shrimp and parsley.
- Cover the skillet with a lid or aluminum foil and place it in the preheated oven.
- Bake for 25 minutes, or until the rice is tender and the shrimp are cooked through.
- Serve with a side of greens for a tasty dinner.
